Soyabean Potato Ki Sabzi

A delicious and heart-healthy Indian-inspired dish that supports a diet aimed at lowering high cholesterol.

Ingredients

  • 1 cup soyabean chunks
  • 2 medium potatoes, diced
  • 1 onion, finely chopped
  • 1 tomato, chopped
  • 1 green chili, chopped
  • 1 tsp cumin seeds
  • 1 tsp turmeric powder
  • 1 tsp coriander powder
  • 1 tsp garam masala
  • Salt to taste
  • 2 tbsp oil
  • Fresh coriander leaves for garnish

Instructions

Soak the soyabean chunks in warm water for 15 minutes. Drain and set aside.
Heat oil in a pan and add cumin seeds. Once they splutter, add chopped onions and green chili. Saute until onions are translucent.
Add diced potatoes and soaked soyabean chunks. Cook for 5 minutes.
Add turmeric powder, coriander powder, and salt. Mix well.
Add chopped tomatoes and cook until they turn soft.
Sprinkle garam masala and mix gently. Cook for another 2-3 minutes.
Garnish with fresh coriander leaves and serve hot with roti or rice.
