French-Inspired Soluble Fiber Cholesterol-Lowering Dish

Ingredients
- 1 cup quinoa
- 2 cups low-sodium vegetable broth
- 1 can chickpeas, drained and rinsed
- 1 red bell pepper, diced
- 1 small red onion, diced
- 2 cloves garlic, minced
- 1 tsp olive oil
- 1 tsp dried thyme
- 1 tsp dried rosemary
- Salt and pepper to taste
Instructions
In a medium saucepan, combine quinoa and vegetable broth. Bring to a boil, then reduce heat and simmer for 15-20 minutes until quinoa is cooked and liquid is absorbed.
In a large skillet, heat olive oil over medium heat. Add garlic, red onion, and red bell pepper. Cook until vegetables are soft, about 5 minutes.
Add chickpeas, dried thyme, dried rosemary, salt, and pepper to the skillet. Cook for an additional 5 minutes.
Combine the cooked quinoa with the vegetable and chickpea mixture. Stir well to combine.
