Italian-Inspired Chicken for Lowering Cholesterol

A heart-healthy Italian-inspired chicken recipe designed to support a diet aimed at lowering high cholesterol.
Ingredients
- 4 boneless, skinless chicken breasts
- 2 tbsp olive oil
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 can diced tomatoes
- 1/2 cup low-sodium chicken broth
- 1 tsp dried basil
- 1 tsp dried oregano
- Salt and pepper to taste
- 2 cups cooked quinoa
Instructions
In a large skillet, heat olive oil over medium heat.
Add onions and garlic, sauté until translucent.
Add chicken breasts to the skillet, brown on both sides.
Pour in diced tomatoes, chicken broth, basil, oregano, salt, and pepper. Cover and simmer for 20 minutes.
Serve chicken over cooked quinoa.
