Fiber-Rich Indian Inspired Cake

A delicious and heart-healthy cake inspired by Indian flavors, packed with fiber, plant-based proteins, and healthy fats.
Ingredients
- 1 cup almond flour
- 1/2 cup coconut flour
- 1/4 cup flaxseed meal
- 1/4 cup chia seeds
- 1/4 cup unsweetened applesauce
- 1/4 cup maple syrup
- 1/4 cup almond milk
- 1 tsp baking powder
- 1/2 tsp baking soda
- 1 tsp cinnamon
- 1/2 tsp cardamom
- 1/4 tsp nutmeg
- 1/4 tsp salt
- 1/2 cup chopped walnuts
- 1/2 cup dried cranberries
Instructions
Preheat the oven to 350°F (180°C) and grease a cake pan.
In a large bowl, mix together almond flour, coconut flour, flaxseed meal, chia seeds, baking powder, baking soda, cinnamon, cardamom, nutmeg, and salt.
Add applesauce, maple syrup, and almond milk to the dry ingredients and stir until well combined.
Fold in chopped walnuts and dried cranberries.
Pour the batter into the prepared cake pan and smooth the top.
Bake in the preheated oven for 35-40 minutes, or until a toothpick inserted into the center comes out clean.
Allow the cake to cool before slicing and serving.
