Fiber-Rich Indian Cake

Ingredients

  • 1 cup almond flour
  • 1/2 cup coconut flour
  • 1/4 cup flaxseed meal
  • 1/4 cup chia seeds
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1/2 tsp cinnamon
  • 1/4 tsp cardamom
  • 1/4 tsp nutmeg
  • 1/4 tsp salt
  • 1/2 cup unsweetened applesauce
  • 1/4 cup maple syrup
  • 1/4 cup coconut oil, melted
  • 1/2 cup unsweetened almond milk
  • 1 tsp vanilla extract
  • 1/2 cup chopped walnuts
  • 1/2 cup raisins

Instructions

Preheat the oven to 350°F (180°C) and grease a cake pan.
In a large bowl, mix together almond flour, coconut flour, flaxseed meal, chia seeds, baking powder, baking soda, cinnamon, cardamom, nutmeg, and salt.
In another bowl, whisk together applesauce, maple syrup, coconut oil, almond milk, and vanilla extract.
Combine wet and dry ingredients, then fold in chopped walnuts and raisins.
Pour the batter into the greased cake pan and bake for 40 minutes, or until a toothpick inserted in the center comes out clean.
Let the cake cool before slicing and serving.
