Ingredients
- 1 cup quinoa

- 1 block extra-firm tofu, pressed and cubed
- 2 tablespoons low-sodium soy sauce

- 2 green onions, sliced
- 1 tablespoon sesame seeds
Instructions
In a medium saucepan, combine quinoa and water. Bring to a boil, then reduce heat to low, cover, and simmer for 15-20 minutes until quinoa is cooked.
In a large skillet, heat olive oil over medium heat. Add onion and garlic, sauté until fragrant.
Add red bell pepper, broccoli, snap peas, and tofu to the skillet. Cook until vegetables are tender and tofu is lightly browned.
In a small bowl, whisk together soy sauce, rice vinegar, sesame oil, and ginger. Pour over the tofu and vegetable mixture, stirring to coat evenly.
Serve the tofu and vegetable stir-fry over cooked quinoa. Garnish with sliced green onions and sesame seeds.
