Indian-inspired Quinoa Curry

A delicious and heart-healthy Indian-inspired quinoa curry recipe that is rich in soluble fiber, plant-based proteins, and healthy fats.
Ingredients
- 1 cup quinoa
- 2 cups water
- 1 tbsp coconut oil
- 1 onion, chopped
- 3 cloves garlic, minced
- 1-inch piece of ginger, grated
- 1 tsp turmeric
- 1 tsp cumin
- 1 tsp coriander
- 1 tsp paprika
- 1 can (400g) chickpeas, drained and rinsed
- 1 can (400g) diced tomatoes
- 1 can (400ml) coconut milk
- Salt and pepper to taste
- Fresh cilantro for garnish
Instructions
Rinse the quinoa under cold water. In a medium saucepan, combine the quinoa and water. Bring to a boil, then reduce heat, cover, and simmer for 15 minutes until the quinoa is cooked.
In a large skillet, heat coconut oil over medium heat. Add the onion, garlic, and ginger. Cook until softened, about 5 minutes.
Add the turmeric, cumin, coriander, and paprika. Stir to combine and cook for another minute.
Add the chickpeas, diced tomatoes, and coconut milk. Season with salt and pepper. Simmer for 10 minutes.
Add the cooked quinoa to the curry mixture. Stir well to combine and simmer for another 5 minutes.
Serve the quinoa curry hot, garnished with fresh cilantro.
