Mexican Casserole

A delicious and protein-packed Mexican breakfast casserole with eggs, bell peppers, onions, cheese, and ground turkey.

Ingredients

  • 6 eggs
  • 1 bell pepper, diced
  • 1 onion, diced
  • 1 cup shredded cheese
  • 1/2 lb ground turkey
  • Salt and pepper to taste

Instructions

Preheat the oven to 350°F (175°C).
In a skillet, cook the ground turkey until browned. Season with salt and pepper.
In a bowl, whisk the eggs and season with salt and pepper.
In a baking dish, layer the cooked ground turkey, bell peppers, onions, and cheese.
Pour the whisked eggs over the mixture in the baking dish.
Bake in the preheated oven for 30-35 minutes, or until the eggs are set.
Slice and serve hot. Enjoy!
